Get Your Ingredients Ready
Before you start cooking, prepare all your ingredients. This will make the cooking process smoother and faster.
Prep the Green Onions, Garlic, and Onion
- Green Onions: Cut 4 green onions in half. Keep the white and green parts separate. Cut the white parts into 2-inch sections and split them in half. Cut the green parts into 2-inch sections as well.
- Garlic: Crush 4 cloves of garlic with a knife. Then, chop them finely.
- Onion: Cut 1 onion into large strips. Separate the strips so they are easier to stir-fry later.
Marinate the Beef
You can use any cut of beef you like for this recipe.
- Slice about 1 pound (480g) of beef against the grain. Cut it into average thickness. You can make the slices thinner or thicker, depending on what you like.
- In a bowl, mix the beef with:
- 2 teaspoons of soy sauce
- 2 1/4 teaspoons of dark soy sauce
- 3/4 teaspoon of oyster sauce
- 3/4 teaspoon of sugar
- 1 1/2 teaspoons of baking soda
- 4 1/2 teaspoons of corn starch
- Mix everything well. Add 3 teaspoons of oil and 1 1/2 teaspoons of sesame oil. Add the oil after the seasonings are mixed into the beef.
Cooking Time
Now it’s time to cook! You don’t need to marinate the beef for a long time.
Stir-Fry the Onions
- Heat a pan over medium-high heat.
- Add 3 tablespoons of oil to the hot pan.
- Add the onion and the white parts of the green onion. Stir-fry them until they lose their raw taste.
- Season with 1/4 teaspoon of sugar and 1/4 teaspoon of salt.
- Don’t overcook the onions. You want them to stay crunchy.
- Take the onions out of the pan and set them aside.
Cook the Beef
- Add 3 tablespoons of oil to the hot pan.
- Add the beef and spread it out. Let it pan-fry for a bit without stirring.
- Once the bottom is slightly brown, stir the beef to flip it over.
- Add the chopped garlic. Stir-fry the beef to mix in the garlic evenly. This way, the garlic won’t burn.
- Cook the beef until it is about 70% done.
- Add 1 1/2 tablespoons of cooking wine to the edge of the pan. The hot pan will bring out the flavor of the wine.
- After the wine cooks off, add 3 teaspoons of dark soy sauce and 1 1/2 teaspoons of oyster sauce. Mix well.
- Add 1/3 cup of water. The sauce will thicken as it cooks.
- When the sauce starts to thicken, add some crushed black pepper.
- Put the onions back into the pan. Give everything a few stirs to mix it together.
