Simple Chocolate Cake Recipe

Making the Cake Layers

First, you will mix all the dry ingredients in a big bowl. Here’s what you need:

  • 2 cups (400 g) granulated sugar
  • 1 ¾ cups (220 g) all-purpose flour
  • 1 cup (85 g) unsweetened cocoa powder
  • 1 heaping teaspoon (5 g) baking powder
  • 1 heaping teaspoon (7 g) baking soda
  • 1/3 teaspoon (2 g) salt

Pour the sugar into the bowl. Sift the flour, cocoa powder, baking soda, baking powder, and salt into the bowl too. This makes sure there are no lumps.

Mix everything together well. Make a small hole in the middle of the dry ingredients. This will help the wet ingredients mix in better.

Next, add the wet ingredients:

  • 2 large eggs
  • 1 cup (240 ml) milk
  • ½ cup (120 ml) vegetable oil
  • 2 teaspoons (10 ml) vanilla extract
  • 1 teaspoon (3 g) coffee
  • 1 cup (240 ml) boiling water

Crack the eggs into the well. Room temperature eggs work best. Pour in the vegetable oil and milk. It is best if the milk is also room temperature. Mix from the center of the bowl, slowly moving outward. This helps the wet and dry ingredients combine well. Add the vanilla extract. Mix until the batter is smooth with no lumps.

Brew some flavored coffee. Pour boiling water over a teaspoon of coffee. Set it aside – you will need it soon.

Grease two 9-inch baking pans very well. Make sure to cover all the edges so the cake doesn’t stick. Line the bottoms of the pans with parchment paper. This will help the cakes come out easily.

Slowly pour the coffee into the batter. Mix it in little by little for a smooth batter. The batter might look thin, but don’t worry, the cake will be perfect.

Pour the batter into the prepared pans. Make sure to divide it evenly.

Bake in a preheated oven at 350°F (175°C) for 30 minutes. Let the cakes cool in the pans for at least 10 minutes before taking them out.

Whipping Up the Chocolate Cream Frosting

While the cakes are baking, you can make the rich chocolate cream frosting. Here’s what you need:

  • 3 egg yolks
  • 1 heaping tablespoon (20 g) sugar
  • 2/3 cup (140 ml) heavy cream
  • 2 chocolate bars (200 g)
  • 2/3 cup (140 ml) heavy cream
  • 1 heaping tablespoon (20 g) sugar

First, whip two-thirds of a cup of heavy cream. Use chilled cream and a cold bowl for the best results. This helps the cream thicken quickly. Once the cream starts to thicken, add one tablespoon of sugar. Keep whipping until it forms stiff peaks. Be careful not to overwhip.

Chop two chocolate bars into small pieces. Dark chocolate with at least 70% cocoa gives the best flavor.

Separate three egg yolks from the whites. Add a tablespoon of sugar to the yolks and mix until smooth. If you like a sweeter frosting, add more sugar. Pour another two-thirds of a cup of heavy cream over the yolks and sugar. Stir until everything is well mixed.

Turn the heat to medium and place the pan on the stove. Keep stirring as it heats up. Do not let it boil. Cook until the mixture thickens.

Remove the pot from the stove and add the chopped chocolate right away. Stir until the chocolate melts and the mixture is smooth.

Gently fold the chocolate mixture into the whipped cream.

Putting It All Together

Make sure the cake layers have cooled for 10 minutes before removing them from the pans. Gently tap the pans to help the cakes come out. The parchment paper will make this easier.

Now it’s time to frost the cake. Spread the cream evenly over the first layer. Add the second layer and cover the entire cake with the remaining cream.

If the frosting becomes hard to spread, warm it in a water bath for a moment. Then, whip it with a mixer until it’s smooth again.

You can make a design on the frosting by spinning the cake on a stand and gently carving lines into the surface with a fork or spoon.
